Paleo Burning Man

September 7, 2013 by Katie

America, Fuck Yeah!

I’m finally home from thirteen days on the road with Burning Man thrown in the middle. We rented an RV, which allowed me to not go insane and provided a better way to stock food. Having a fridge and freezer was crucial for bringing nutritious meals. Also, I have some cool friends who know how to cook and that allowed us to game plan meals for the week. We had to plan for 5 dinners and 5 breakfasts for 6. Here’s what we made and brought:

Dinner 1: Paleo Butternut Squash Lasagna

Dinner 2: Paleo Bacon Wrapped Meatloaf

Dinner 3: Paleo Pulled Pork Tacos with Guacamole

Dinner 4: Marinara with Grassfed Beef and Italian Sausage. Served over Brown Rice Pasta.

Dinner 5: Leftovers! We had more than enough Italian meals to fill every one up!

Breakfast 1-2: Egg Cupcakes

Breakfast 3: Bacon and Eggs.

Breakfast 4-5: Frittata

Homemade Snacks: Gelatin Fruit SnacksJerky, and a good friend made our crew a ton of cookies for our tea parties on the playa!

Store Bought Snacks: Krave Jerky, Dates, Almond Butter, Peanut Butter, Plantain Chips, Dried Mangos, Larabars, OlivesChicken Sausage (paired with mustard of course), Deli MeatSalamiPepperoniRice CerealAlmond Milk, Iced Tea, Camelbak Elixir, and Pedialyte Pops

Fresh Fruits and Veggies to have on hand: Baby Carrots, Celery Sticks, Apples, Oranges, Mini Bell Peppers, Cucumbers, and Lettuce.

The items I’ve listed above represent what we ate during Burning Man. Some items are not Paleo, but this is how I eat. I’ve added rice and peanut butter to my “Paleo” and I’ve had no ill effects. If anything, I enjoy my meals more, so for me that’s a win! If you’re strict Paleo, avoid the peanut butter, rice pasta, rice cereal, and the almond milk is iffy because of all the preservatives. I typically make my own almond milk, but for traveling Almond Breeze saves the day!

If you get the opportunity, GO TO BURNING MAN! It will change your life and leave you with one of a kind experiences! And that’s what life is all about, right?! Enjoy some of my pictures below.
